Microwave Whole Wheat and Honey Berry Muffin

     A few days ago, my super awesome and thoughtful boyfriend sent me a webpage that had links to several different mug cakes. The one that caught my eye was the blueberry muffin recipe here. So tonight, with the Frozen soundtrack playing in the background, I decided to see if I could make my own version.

Ingredients
1/4 cup whole wheat flour
1/8 tsp. baking powder
1/16 tsp. baking soda
1 tbsp. olive oil
1 tbsp. honey
3 tbsp milk
Berries



    First, mix the flour, powder, and soda together thoroughly. I don't know about you, but I don't think there is anything worse than biting into a mouthful of unmixed baking soda!
     Second, add the oil, honey, and milk. Hint: Measure the oil first, then use the same spoon to add the honey. The honey will slip right out with no mess!
     Third, mix in the berries. I picked out the blueberries and used those.


It is now time to cook your personal muffin! Although the original recipe called for 1 minute, I had to microwave mine for 1 1/2 minutes. I think the longer cook time was due partly to the thicker ingredients used and the fact that I used frozen instead of fresh berries.


     The toothpick method works great to check the doneness of your muffin. When I stopped cooking mine, there was still a tiny layer on one section of the top that seemed under cooked, however, if I had cooked it any longer, the middle would have been overcooked. The tiny spot seemed to finish cooking on its own.



     The results were delicious! As is usually the case when using wheat flour, the texture was a bit heavier than traditional muffins, but that in no way impaired the taste. You could probably also reduce the amount of honey even more. It wasn't overly sweet, but there was still a very distinct honey taste.
     I didn't make a streusel topping, however, if you choose to, simply mix butter (please, please, please do not use margarine or other fakeness!!), flour and/or oatmeal, and sugar to your liking and sprinkle on top.

     This would make a great breakfast for one or, if your just looking for a little sweet, a snack for two.
